Easy Poached Egg (in the microwave!)


I know, eggs and microwaves generally don’t mix. If it wasn’t for utter boredom during a rainy day here in the pacific northwest and an abundance of eggs on hand (this was prior to egg shortages and price gouging), I would not have tried this.


Please note, this will take some trial and error due to variables like the wattage of your microwave, the cooking vessel you use, and the size of the egg. But for me, even with these variables, I have a perfect poached egg about 95% of the time, where my success rate in a pot is about 20%.


Equipment needed:


  • 1 egg
  • 1 small mug
  • Plastic wrap (ideally not actual plastic - I use Glad’s plant based food wrap)
  • 1 spoon large enough to flip the egg in the cup and remove it.
  • Paper towel for draining


Instructions:


Crack 1 egg into small mug.


Gently add water to the mug (about the same volume as the egg)


Lightly drape (but don’t seal) the mug with the “plastic” wrap


Pop in the microwave for 50 seconds at 60-80% power


Remove mug from microwave. The egg should appear somewhat formed, but most of the white will still be clear. If the egg is not at all formed, put back in microwave for 5 second increments until it is.


Gently turn the egg over inside the mug with the spoon.


Re drape the “plastic” wrap and pop back in the microwave for 10-12 seconds, also at 60-80% power.


Remove from microwave promptly and use spoon to gently remove egg from mug and place on paper towel to drain.


Once drained, add poached egg to your benedict or avocado toast, split open and enjoy the rich golden yumminess!
