Easy Alfredo Sauce (also keto!)


I came up with this recipe when I was eating keto and looking for quick and easy meals at home that didn’t require use of my stove. As this was developed when I was eating keto, this sauce was made thick and creamy to be ideal for coating things like broccoli and chicken and was not tested with noodles. I imagine it might just need some thinning by replacing the heavy cream with whole milk perhaps to be more like an alfredo sauce meant for pasta.


Ingredients:

  • Parmesan cheese wedge
  • Salted butter
  • Heavy cream
  • Cream cheese
  • Garlic Powder
  • Salt
  • Black Pepper


Instructions:


In a large coffee mug, grate parmesan cheese wedge - about ½ cup worth. 

Add 2 TBPS butter and roughly 1-2 TBSP cream cheese and place in the microwave to soften. Use low power - no greater than 60%, and remove and stir at least every 10-20 seconds. 

Once well-softened and combined, add pinch of garlic powder, salt, and pepper to taste.

Add heavy cream and stir lightly until the consistency is creamy.

Reheat slightly in the microwave if desired.


That’s it!


This wonderfully rich and decadent alfredo sauce is done in a matter of minutes in a mug in the microwave. I absolutely have made it and drizzled it upon steam-in-the-bag broccoli at 2:00am after coming home from the bars and looking for yummy a keto snack before bed. Enjoy!
